Cody, Health Director; Ann Belliveau, Health <br />Clerk <br /> <br />Heiger-Bernays called to order at 7:00 p.m. <br /> <br />The Board reviewed the minutes of November 18, 2009. Perlmutter motioned to accept <br />the minutes with corrections. MacKenzie seconded. All approved. <br /> <br />Environmental Health Report <br /> <br />Dabins – Cody advised the Board why Dabins is before them this evening. Maureen Lee <br />has been hired by Dabins as a food consultant. Lee informed the Board that during an <br />inspection conducted on 11/27/09 there were a few critical violations relative to the Sushi <br />bar. Lee will be going over training with the Sushi Chef again completely. According to <br />Lee, cleaning and handling practices, hand washing at appropriate times had improved. <br />Lee’s contract will expire on 12/31/09 but Lee will appear at the January 2010 meeting. <br />MacKenzie motioned that when Lee conducts the next inspection, if there are any critical <br />violations within the Sushi prep area, Cody will be notified by Lee and Sushi prep will <br />cease until the next Board of Health meeting in January. Perlmutter seconded. All <br />approved. <br /> <br />Khushboo – Sunny Sarni of Khushboo appeared before the Board as a result of an <br />inspection conducted on November 7, 2009 and an order to correct letter. Lisa Berger <br />has been hired as their food consultant and will provide an update at the January 2010 <br />meeting. <br /> <br />Wilson Farms – Cody advised the Board that this hearing will be revisited at the January <br />2010 meeting. <br /> <br />La Riveria – Yves Charles, owner of La Riveria, came before the Board to request a <br />variance to continue to use the 2 bay sink which is not allowed in Food Establishments <br />according to the 1999 Food Code. After a discussion, Perlmutter motioned as stated in 8- <br />103.10 of the State Sanitary Code for Food Establishments, the Board of Health has <br />decided to grant a variance from section 4-301.12 in reference to the use of a 2 bay sink. <br />Furthermore, La Riveria may use the 2 bay sink only for the washing and sanitizing of <br />full sheet pans which do not fit in the dishwasher. Should there be any deviation from the <br />use of this sink as evident by the inspection process, then this variance becomes null and <br />void and a three bay sink will be required to be installed.
