Emergency Preparedness Report
The meeting was called to order at 7:00 PM. Wendy Heiger-Bernays, PhD, served as Chair Person.
Director Cody reviewed the Community Health Report;
Mental Health First Aid(MHFA) and Youth Mental Health First Aid(YMHFA) classes continue to be offered to
members of the community, Lexington Public Schools teachers and staff and faith-based organizations in Lexington.
Training have been scheduled free-of-charge upon request. Upcoming training dates include; May 3rd, May 24d.
Debra Packard, Bring Your Own Bag Lexington Committee, met with the BOH to discuss a draft of Committee's Plastic
Bag Reduction Bylaw. The Committee is working with local merchants to reduce the bags from 2.5 grams.
Environmental Health report was reviewed and the following topics were discussed;
Beijing Chinese Dining; 3 repeat critical violations of the food code were observed at an inspection that took place on
February 27, 2018. An OTC was issued on February 28, 2018. After some discussion, Sharon MacKenzie R.N., CCM,
proposed a motion that stated, "Based on the evidence provided in the Order to Correct Letter dated February 28, 2018, it
is well documented that additional training is required for the management and food service staff at Being Fine Dining.
The training is to take place while the establishment is closed, managers and food service staff are to be trained by an
approved Food Safety Consultant. Topics for the training are based on the three Repeat Critical Violations. The topics
are as follows:Person in Charge requirements for I day, Food Protection from Cross Contamination on day 2 and
Keeping Food out of the Danger Zone on day 3. Each day of closure and training is not required to be on consecutive
days, however all the trainings and closures must take place before Tuesday May 1, 2018. By Friday March 30, 2018,
provide the name of the Food Consultant that will conduct the training and the dates that the establishment will be closed.
In addition, Being is required to have the food consultant conduct and unannounced food inspection and report back to
the Board of Health at the May meeting. It is the expectation of the Lexington Board of Health that Being will comply
with the Food Code requirements. Your 2018 Food Permit to operate will not be issued until the three days of closure
with trainings outlined above has been completed and the Food Consultant has reported an acceptable level of
compliance at the May Board ofHealth Meeting."Wendy Heiger-Bernays, PhD seconded the motion. All were in favor.
Dunkin Donuts—Hearing; Repeat violations of Chapter X of the State Sanitary Code were observed at an inspection that
took place on January 29, 2018. An OTC was issued on February 23, 2018.No Representative from the establishment was
present. The OTC issued, must be corrected before the next re-inspection.
Tres Petite Creperie-New Food Establishment Permit; An existing establishment that is changing owners. Augusto Rios,
owner, met with the BOH to request a permit to operate a Food Establishment, and a variance from the requirement of a
three bay sink. After some discussion, Wendy Heiger-Bernays, PhD,proposed a motion that stated, "The Lexington Board
ofHealth grants an Annual Permit to Operate a Food Establishment to Tres Petite Creperie upon a successful completion
of a pre-operational inspection."John J. Flynn seconded the motion. All approved.
John J. Flynn proposed a motion stating, "The Lexington Board ofHealth grants a variance to substitute a mechanical
warewasher from the requirement of Food Code 4-301.12 Numbers and capacities for Manual Warewashing Sink
Compartment Requirements. All food contact equipment and utensils will be cleaned and sanitized in the mechanical
warewasher." Sharon MacKenzie R.N., CCM, seconded the motion. All were in favor.

Variance from State Plumbing Code - 30 Whipple Road; The contracted Plumber for the referenced address has requested
a variance to allow a 4"plumbing vent pipe to go through the main roof and terminating inside a vented copula. After
some discussion, Sharon MacKenzie R.N., CCM,proposed a motion that stated, "The Lexington Board ofHealth is not
opposed to this request to allow a plumbing vent pipe to discharge into a vented copula under the condition that the
building owner complies with all applicable laws and regulations."Wendy Heiger-Bernays, PhD, seconded the motion.
All were in favor.
Building Material-update; Mark Sandeen, Chair, Sustainable Lexington Committee, met with the BOH to discuss
building standards for health protection(See January 24, 2018 meeting minutes for more details).
Potable Well Water—Update. Office of Public Health Intern Annelise Driscoll, has been working with Lexington
residents who have potable drinking water wells, to test water quality.
The Emergency Preparedness report was reviewed and the following topics were discussed;
The Office of Public Health, in collaboration with the Lexington Fire/EMS, Lexington Police, Lexington DPW, and
Region 4A MRC opened a temporary overnight shelter at Lexington High School(LHS)beginning at 7PM on Friday
March 9"'. Since no residents decided to stay overnight the shelter was closed at IOPM. The Health Director and other
managers met the following morning and decided that a shelter would not be necessary going forward for the remainder of
the weekend.
Sharon MacKenzie R.N., CCM, motioned that the meeting be adjourned and Wendy Heiger-Bernays, PhD, seconded.
All were in favor. The meeting adjourned at 8:25 PM.
It was noted that the next meeting will take place on Wednesday, April 24, 2018.
