Cody, Health Director; Ann Belliveau, Health <br />Clerk/Office Manager <br /> <br />Wendy Heiger-Bernays called the meeting to order at 7:00 p.m. <br /> <br />The Board reviewed the minutes of January 10, 2012. Perlmutter motioned to accept the <br />minutes as written. MacKenzie seconded. All approved. <br /> <br />Environmental Health Report – Food Inspection Program <br /> <br />Qdoba Mexican Grill – Gerard Cody introduced Francis Diaz, Regional Manager for <br />Qdoba Mexican Grill in Massachusetts. Mr. Diaz Qdoba Mexican Grill has completed <br />the food plan review with the Health Division but they are awaiting building renovations <br />before the final inspection. Diaz explained that there will be a full service <br />kitchen but there will not be any wait staff. Heiger-Bernays asked if there will be staff <br />present at all times who are Serve Safe Certified. Diaz responded that shift managers will <br />be ServSafe certified. Heiger-Bernays asked Diaz if there will be staff present at all <br />times who are serve safe certified. Heiger-Bernays mentioned to Diaz that free safe food <br />handling workshops offered by the Health Department and Diaz stated he would like to <br />have staff attended these workshops. Diaz hopes to open June 5, 2012. After a <br />discussion, Perlmutter motioned that the Lexington Board of Health grants an annual <br />permit to operate a food establishment to Qdoba Mexican Grill at 46 Bedford Street upon <br />successful completion of a pre-operational inspection. MacKenzie seconded. All <br />approved. <br /> <br />50 Bridge Street - Variance from the requirement of the two acre minimum to obtain an <br />animal permit for the keeping of more than 5 (five) chickens. <br /> <br />Cody introduced Ellen McDonald and Ben Schlosser of 50 Bridge Street to the Board <br />who is requesting a variance from the requirement of a two acre minimum to obtain a <br />permit for keeping 50 chickens. Heiger-Bernays asked why 50 chickens? Schlosser <br />stated that they are trying to develop feed systems for backyards that can be replicable <br />and in order to test the system on moderate scale a fair number of birds are necessary to <br />make sure the system will work as the number of birds increase or decrease. Schlosser <br />would like to test feeds in this controlled setting and to be able to use it in other locations. <br />They hope to use the manure as a compost product at this residence. After a discussion, <br />the Board determined they would need to see a plan dealing for the manure indicating <br />where is it going and how is it getting there because of the size of the lot and the <br />residential neighborhood along with a plan concerning what will happen to all of the <br />eggs. <br /> <br />Orange Leaf – Cody introduced James Berberian and Jim Alex of Orange Leaf to the <br />Board. Alex advised the Board that this new yogurt establishment will be a self-serve <br />yogurt establishment offering 16 yogurt flavors with 48 different toppings. The yogurt <br />will be tested monthly. Cody advised the Board of the free food training being offered on <br />March 26, 2012, as the person-in-charge local regulation requires that a ServSafe <br />Certified person-in-charge be present at all times. After a discussion, Geller motioned <br />that the Lexington Board of Health grants an annual permit to operate a food <br />establishment to Orange Leaf at 1726 Mass Avenue upon successful completion of a pre- <br /> <br />
