Ken Ford of Wilson Farm explained that they wish
to use the same process and add several items for this process. After a discussion,
Perlmutter motioned that the Lexington Board of Health approves of the variance
request to package deli related items as outlined in the HACCP plan dated
September 27, 2010. There are other items
such as apple cider and shelled eggs which occasionally do not meet the
temperature requirements for cold holding (due to the large volume of product).
After much discussion, Perlmutter motioned that a variance will be granted under
time as a public health control once a list of food items to be included in the
variance has been submitted to the Health Division on or before January 30, 2011.
and any items exceeding the 4 hours will be discarded. Geller seconded. All
approved.

The Board reviewed the Environmental Health Report prepared by Kathy Fox.

Community Health Updates/Reports – The Board reviewed the Community Health
Report prepared by David Neylon, R.N., and all follow-ups had been done in a timely
manner.
